It’s never too late to meal prep like a boss.
Mason jars are not just a hipster artifact. They are quite useful, especially for meal prepping during a busy week.
On Sunday, you can pre-pack a bunch of mason jars with your salad accoutrements and never have to worry about lunch. Even the lettuce – when properly packed – will stay fresh all week.
It’s all about the layering. Seriously.
First, grab a pint sized mason jar and drizzle 2-3 TBSP of your favorite dressing. Next, layer in heavy veggies (like cauliflower, carrots, broccoli, cucumbers, tomatoes, cabbage). Then, softer veggies (mushrooms, olives, sprouts). Now, add 1-3 TBSP of grains (rice, quinoa, pasta). And finally, tuck your greens on top. Put the hearty greens (kale, spinach) in first and then top with the softer greens (cilantro, dulse).
Option to top with nuts or seeds – we’re partial to hemp seeds (so nutritious!).
And there you go. You just meal prepared like a boss.
Pro tip: When you’re ready for lunch, shake up your jar and pour it into a bowl.
